Another very versatile meal - it will work well for brunch, lunch or dinner! It is quick, and you are easily adaptable depending on what you have on hand.

Origins of Frittata

Did you know a frittata is originally an Italian egg dish similar to an omelette or crustless quiche? They are traditionally made by whisking eggs with various ingredients such as vegetables, cheese, meats, and herbs, then cooking everything together in a skillet on the stovetop until the eggs are set.

Frittatas are versatile and can be served hot or cold, making them a fabulous addition to picnics. I will often turn to a frittata to use up leftover vegetables.

This Spanish style is my family’s favourite. It works well with small chat potatoes for the carb lovers in your life.

This super versatile frittata will work well for brunch, lunch or dinner. I use a 26cm caste iron skillet which makes it easy to cook then grill.

Ingredients

Instructions

  1. Add the olive oil to the skillet (set to medium high temperature) and add the chorizo and onion, and cook till browned.
  2. Add the red capsicum for few minutes till its cooked.
  3. Meanwhile, mix together the eggs, sour cream, cheese and basil leaves.
  4. Add the egg mixture to the skillet and cook, being careful to not burn the bottom of the skillet. I often drop the temperature after a few minutes. Cook till the bottom half is cooked and there are bubbles on top.
  5. Place the skillet under a grill, and cook till the top if brown. You will notice the top rises too.
  6. Slice and serve.
