Nicoise Salad

For me, a Nicoise salad is the perfect antidote to the excesses of Christmas and New Year festivities! It is simple, clean, quick and easy! I often change the ingredients based on what I have, but I do like to always include tuna, olives, capers, eggs and a crisp lettuce. I always add a little more lemon juice to the dressing too - to make it extra tart!

For me, a Nicoise Salad is the perfect antidote to the excesses of the festive season!

Ingredients

  • good handful of green beans, trimmed and cut in half
  • 2 tomatoes, cut into 8ths
  • 1 baby cos lettuce, cut into large bite size pieces
  • 3 hard-boiled eggs, peeled and quartered
  • ½ small container of pitted Kalamata olives
  • 2 tbsp capers, drained of brine
  • 425g can Sirena tuna in oil, drained
  • 2 tbsp lemon juice
  • 4 tbsp extra virgin olive oil
  • 1 small garlic clove, crushed
  • pinch of sea salt
  • 1 tsp Dijon mustard

Instructions

  1. Blanch beans till just cooked, and rinse under cold water to stop them cooking further. Drain, pat well to dry.
  2. To assemble the salad, place cos lettuce at base of wide and flat bowl. Add tuna chunks on top, following with the beans, tomatoes, olives, capers and eggs.
  3. Add lemon juice, olive oil, garlic, mustard and salt to a jar, and shake to emulsify.
  4. Drizzle with dressing over and serve!
