Chicken, Chorizo & Tomato Bake

I love a one-pot wonder, and this Spanish inspired Chicken, Chorizo & Tomato Bake fits the bill perfectly. It is a crowd-pleaser and works well reheated, which is an added bonus.

The winning combination of chicken, chorizo and tomato makes for a delicious and flavorful dish that comes together for a comforting meal.

Is it Chorizo or ‘"cho-ree-thoh" ’?

Chorizo is a type of sausage that originated in the Iberian Peninsula, which includes both Spain and Portugal. The name "chorizo" itself is derived from the Latin word "salsīcium," which refers to a type of salted meat. It is typically made from coarsely chopped pork and seasoned with a variety of spices, including paprika, garlic, and sometimes chilli powder or other ingredients for added flavour and heat. It can be either cured or fresh, with many regional variations in both Spain and Portugal.

The pronunciation of "chorizo" can vary depending on the regional accent and language. In Spanish, it's pronounced as "cho-ree-thoh," with the stress on the second syllable. The "ch" sound is similar to the English "ch" in "cheese," and the "r" is pronounced with a slight rolling sound. The final "o" is pronounced like the "o" in "go."

Like always, this recipe is best when using premium ingredients, especially the chorizo. It is hearty comfort food at its best!
