Cheese Twists

I love entertaining. My favourite way to entertain is for our guests to join me at the kitchen island bench, grazing on an antipasto platter with a glass of something nice in hand whilst I prepare the main course. There is a particular brand of pastry twist that I loved to include on my antipasto platter, which was, of course, banished once I embraced low-carb living. Using the ubiquitous fathead dough, this recipe for Cheesy Twists has been a game changer for me. It is quick, easy to prepare and is a crowd-pleaser.

What is Fathead Dough, you ask?

Tom Naughton created Fathead Dough for his 2009 documentary "Fat Head". Since then, it has become popular in the low-carb and ketogenic communities as a low-carb, gluten-free, and keto-friendly alternative to traditional dough used in recipes like pizza crust, crackers and pastry. The main ingredients in fathead dough typically include mozzarella cheese, cream cheese, almond or coconut flour, eggs and baking powder.

Super Versatile

One of the terrific aspects of this recipe is that it is super versatile. You can shape it to suit, including focaccia, crackers, pizza base - loaded with your favourite toppings like cheese, bacon, garlic, herbs, seeds, tapenade and pesto. When I'm serving these on an antipasto platter, I love the simple flavours of parmesan cheese and everything but the bagel seasoning.

These cheese twists are the perfect accompaniment to drinks, a charcuterie board or served with dips.

Ingredients

  • 1 ¾ cups shredded low-moisture mozzarella cheese (200 g/ 7 oz)
  • 1 heaped tbsp cream cheese (30 g/ 1.1 oz)
  • 1 large egg
  • 1 ½ cups almond flour (150 g/ 5.3 oz)
  • 2 tsp baking powder
  • 2 tsp xanthan gum
  • 1 tsp sea salt
  • 2 tbsp unsalted butter, melted (30 ml)
  • 30g parmesan cheese (approx)
  • Everything But the Bagel Seasoning

Instructions

  1. Microwave the mozzarella & cream cheese until melted.
  2. Put it into the food processor with the rest of the ingredients.
  3. Make a ball. Cut in half and roll out.
  4. Cut into strips and twist.
  5. Brush with melted butter.
  6. Grate over parmesan cheese and sprinkle with Everything but the Bagel.
