Recreating Favourites

We all have favourite foods. One of the most significant mind shifts when modifying your diet, such as adopting a low carb lifestyle, is FOMO… the fear of missing out.  What I have discovered, though, is that with a few tweaks, you don’t need to miss out.

Chicken Kyiv

Chicken Kyiv has long been my go-to pub meal, all that buttery garlic goodness oozing out of a crumbed chicken casing. Certainly not high-brow eating, but profoundly satisfying all the same!  Well, I no longer need to miss out!  My new Low Carb Chicken Kyiv recipe is just as delicious and is quick and easy to prepare!  Winner, winner! 

I first tested this recipe with chicken mince that needed to be used, but next time I will use breast fillet, flattened with a mallet as in the traditional method.  The winning element of this dish is replacing the flour and bread crumb coating with a ’crumb’ of seasoned almond flour.

 

Low Carb Pizza

My other ‘low carb hack’ is pizza!  Indeed Friday nights were pizza night in my home for many years. When I first went low carb, I struggled with letting go of that tradition.  But then I discovered the flathead dough version, and Friday night pizzas were on the menu again! 

Fathead Dough has revolutionised low carb cooking. You can read more about its origins here, but needless to say, Tom Naughton's recipe is the epitome of a game changer.  I use the basic recipe many ways, and it is the basis for the most successful pizza option I have tried (and I have tried quite a few!). 

I add the same combination of ingredients I have enjoyed to the pizza base for many years. The first is a basic salami pizza with a tomato base, hot calabrese salami, marinated chargrilled capsicum and olives. Next, I do a mozzarella, pesto, red capsicum, olive and caper version; followed by prosciutto, feta cheese, and thyme one and finally, pancetta, Rochefort cheese, sauteed leeks version.

So, as you can see, you do not need to forgo your favourite meals when living a low carb life! The hack options are endless and only limited by imagination.
